Bruschetta Mozzarella

This is a guest post by Elana Birnbaum

Bruschetta is a traditional Italian appetizer that dates back to the 15th century. Originally created to salvage drying bread, the flavorful treat has come a long way. The classic snack sounds posh, exotic and even complicated but it is truly quite simple to make. Bruschetta is basically garlic bread topped with savory peppers, onions and more. This modernized Bruschetta Mozzarella recipe adds a delicious layer of Mozzarella Cheese for a richer, more delectable taste. The key ingredients of this recipe are 1 loaf (1 lb) of Italian Bread and 1 clove of garlic, minced. Additional toppings include 1/3 a cup of olive oil, 1/4 tsp. of pepper, 2 green onions, thinly sliced, 1 medium tomato, seeded and chopped and of course, 1-1/2 cups (6 oz.) of a shredded mix of Mozzarella and Provolone Cheese or simply shredded Mozzarella Cheese. Whichever option you prefer is fine, both choices are delicious, the Provolone mixture just has a slightly smokier taste. Optional ingredients include ? tsp. of salt and fresh parsley sprigs.

To make this an easy appetizer, you can begin by cutting your Italian Bread in half, lengthwise. This is basically going to look like you cut the bread in half for a sandwich. Then, place the cut-side up on a foil lined baking sheet. Instead of loading the bread up with traditional sandwich stuffing however, you will combine your oil, garlic, pepper, and, if desired, salt and brush this mix over your bread. Sprinkle both halves with your green onions, tomatoes and mozzarella cheese. Preheat your oven to 500 degrees Fahrenheit and bake your Bruschetta for about five minutes or until the cheese is melted and the edges of your bread are lightly browned and crispy. Finally, take your bread out and cut each half into 1 inch pieces. You may garnish with parsley if you desire. Now, your Bruschetta Mozzarella is complete and ready to eat. This recipe should produce 28 inch wide appetizers. In less than fifteen minutes you will have a great starter that is perfect for parties or serving with dinner.
