Pakistani girl jailed, accused of blasphemy

ISLAMABAD (AP) ? A Christian girl was sent to a Pakistani prison after being accused by her furious Muslim neighbors of burning pages of the Islamic holy book, the Quran, in violation of the country's strict blasphemy laws.

A police official said Monday there was little evidence that pages of the book had been burned and that the case would likely be dropped. But hundreds of angry neighbors gathered outside the girl's home last week demanding action in a case raising new concerns about religious extremism in this conservative Muslim country.

Some human rights officials and media reports said the girl was mentally handicapped. Police gave conflicting reports of her age as 11 and 16.

Under Pakistan's blasphemy laws, anyone found guilty of insulting Islam's Prophet Muhammad or defiling the holy book, or Quran, can face life in prison or even execution. Critics say the laws are often misused to harass non-Muslims or target individuals.

Police put the girl in jail for 14 days on Thursday after neighbors said they believed a Christian girl had burned pages of a Quran, gathering outside her house in a poor outlying district of Islamabad, said police officer Zabi Ullah. He suggested she was being held for her protection.

"About 500 to 600 people had gathered outside her house in Islamabad and they were very emotional, angry and they might have harmed her if we had not quickly reacted," Ullah said.

Almost everyone in the girl's neighborhood insisted she had burned the Quran's pages, even though police said they had found no evidence of it. One police official, Qasim Niazi, said when the girl was brought to the police station, she had a shopping bag that contained various religious and Arabic-language papers that had been partly burned, but there was no Quran.

Some residents claimed they actually saw burnt pages of Quran ? either at the local mosque or at the girl's house. Few people in Pakistan actually speak or read Arabic, so often assume that anything they see with Arabic script is believed to be from the Quran, sometimes the only Arabic-language book people have seen.

But one police officer familiar with the girl's case said the matter would likely be dropped once the investigation is completed and the atmosphere is defused, saying there was "nothing much to the case." He did not want to be identified due to the sensitivity of the case.

A spokesperson for Pakistani President Asif Ali Zardari, Farhatullah Babar, said the president has taken "serious note" of reports of the girl's arrest and has asked the Interior Ministry to look into the case.

In Washington, State Department spokeswoman Victoria Nuland called the case "deeply disturbing".

"We urge the government of Pakistan to protect not just its religious minority citizens but also women and girls," she said.

The Associated Press is withholding the girl's name; the AP does not generally identify juveniles under 18 who are accused of crimes.

The case demonstrates the deep emotion that suspected blasphemy cases can evoke in a country where religion Many critics say the blasphemy laws are often abused.

"It has been exploited by individuals to settle personal scores, to grab land, to violate the rights of non-Muslims, to basically harass them," said the head of the Human Rights Commission of Pakistan, Zora Yusuf.

Those convicted of blasphemy can spend years in prison and often face mob justice by extremists when they finally do get out. In July, thousands of people dragged a man accused of desecrating the Quran from a police station in the central city of Bahawalpur, beat him to death and then set his body on fire.

Attempts to revoke or alter the blasphemy laws have been met with violent opposition. Last year, two prominent political figures who spoke out against the laws were killed in attacks that basically ended any attempts at reform.

The girl's jailing terrified her Christian neighbors, many of whom left their homes in fear after the incident. One resident said Muslims used to object to the noise when Christians sang songs during their services. After the girl was accused he said senior members of the Muslim community pressured landlords to evict Christian tenants.

But Muslim residents insisted they treated their neighbors with respect, and said Christians needed to respect Islamic traditions and culture.

"Their priest should tell them that they should respect the call for prayer. They should respect the mosque and the Quran," said Haji Pervez, one of several Muslims gathered at the local mosque less than 100 yards (meters) from the grey concrete house where the Christian girl lived.

"This is what should have happened. We are standing in the house of God. This incident has happened and it is true. It was not good."

"Even a 3-year-old, 4-year-old child knows: "This is Muslim. This is Christian. This is our religion," said shopkeeper Mohammed Ilyas.

How hot is it? University Bridge must close

It's hot enough in Seattle that transportation officials plan to periodically close the University Bridge Friday to spray it down with water and let it cool.

The bridge will be closed to car traffic about once every hour? so a "flusher truck" can wet down the bridge, the Seattle Department of Transportation reports. Drivers should expect delays.

"This procedure will take up to 10 minutes and will continue while temperatures remain elevated," SDOT announced in a news release.

UPDATE: The bridge will not have to close during the evening rush-hour, SDOT reports. Crews will monitor the bridge Saturday and spray it down if needed.

It was hot Friday, though not as warm as once predicted. Cooler marine air may keep the temperature in Seattle in the upper 80s on Friday and not the 90s that was predicted.

The National Weather Service has canceled the heat warning and posted a heat advisory until 9 p.m.

It will still be warm, of course. So maybe you could cool off while walking across the University Bridge.

Pedestrians and bicyclists will be allowed to cross during the spraying, but should use caution on the wet surface, SDOT reports.

"The purpose of flushing is to cool the structure and minimize expansion. If the two leaves of the bascule portion of the bridge expand too much, they could become inoperable and not able to be opened and closed for marine traffic," SDOT reports.

That happened during a hot spell two years ago, SDOT spokeswoman Marybeth Turner said. But it's the only bridge in town where extreme heat has been a problem, she said.

Rio Ferdinand fined $71,000 over 'choc ice' tweet

LONDON (AP) -Manchester United defender Rio Ferdinand has been fined 45,000 pounds ($71,000) by the English Football Association after being found guilty of improper conduct over a Twitter comment about Chelsea rival Ashley Cole.

An independent commission found Friday that Ferdinand was guilty of referencing ethic origin and race when he re-tweeted a user's comment that referred to Cole as a "choc ice," a slang term perceived as meaning black on the outside and white on the inside.

Ferdinand argued the term instead means someone who is being fake.

The comments, posted on July 14, came after Cole gave evidence in court defending Chelsea teammate John Terry who was on trial for allegedly racially abusing Ferdinand's younger brother, Anton, in a match last year. Terry was found not guilty.

The faraway Phoenix galaxy cluster may be the biggest and brightest such structure ever discovered, and it's forming stars at an unprecedented rate, scientists announced today (Aug. 15).

Here's a by-the-numbers look at the?Phoenix cluster?? formally known as SPT-CLJ2344-4243 ? which researchers say could yield key insights into how galaxies and colossal clusters evolve:

2.5 quadrillion:?How many times more massive the Phoenix cluster is than our own sun. This may be an all-time record for galaxy clusters ? the most massive structures in the universe, composed of hundreds or thousands of individual galaxies bound together by gravity ? researchers said.

"I would say it's in a dead heat for the most massive galaxy cluster," Michael McDonald of MIT, lead author of the study describing Phoenix's remarkable properties, told SPACE.com contributor Charles Choi. "The record-holder,?'El Gordo,' is slightly more massive, but the uncertainty in this estimate is high ? it could turn out that with more careful measurements, Phoenix is more massive."

3 trillion:?The number of stars that reside in the Phoenix cluster's central galaxy, compared to 200 billion or so in our own Milky Way. [Gallery: Chandra Spies Fastest-Growing Galaxy Cluster]

10 billion:?The low-end estimate of the mass of the huge black hole at the heart of Phoenix's central galaxy, in solar masses. That's about as massive as the biggest black hole ever discovered.

For comparison, the Milky Way's central black hole weighs in at about 4 million solar masses.

5.7 billion:?The approximate distance of Phoenix from Earth, in light-years. The cluster is found in the Phoenix constellation, partly explaining its informal name.

However, researchers also chose the moniker as a nod to the mythological bird that rises from its own ashes, since Phoenix's central?galaxy?has seemingly come back to life with a huge burst of star formation.

2010:?The year in which astronomers discovered Phoenix, using the U.S. National Science Foundation-funded South Pole Telescope. But it took the team a little while to learn just what they had found.

"We really didn't realize how remarkable it was until late last year and early this year, when we got follow-up X-ray and optical and ultraviolet and infrared measurements that constrained the star-formation rate," McDonald told reporters today.

740:?The approximate number of stars generated per year by the galaxy in Phoenix's center, a new high for the middle of a cluster.

"This extreme rate of star formation was really unexpected," McDonald said. "It's nearly five times higher than the next most star-forming central-cluster galaxy, in Abell 1835. So it's really crushing the record."

Our own Milky Way galaxy produces just one to two new stars every year on average, McDonald added.

Nebraska will deny benefits for 'deferred action' immigrants

(Reuters) - Illegal immigrants sheltered from deportation under a new federal program still won't be eligible for state services such as driver's licenses in Nebraska, the state's Republican governor said on Friday.

Governor Dave Heineman, in making the announcement, joined Arizona Governor Jan Brewer in challenging the federal government on immigration policy. Two days ago, Brewer issued an executive order barring illegal immigrants from getting state benefits.

"President Obama's deferred action program to issue employment authorization documents to illegal immigrants does not make them legal citizens," Heineman said in a statement.

"The State of Nebraska will continue its practice of not issuing driver's licenses, welfare benefits or other public benefits to illegal immigrants unless specifically authorized by Nebraska statute," he added.

The Obama administration's new policy, dubbed "deferred action for childhood arrivals," took effect this week. It grants temporary legal status to many young illegal immigrants, ending the threat of deportation for at least two years. But the policy does not entitle the immigrants to state services.

In Texas, Republican Governor Rick Perry, who earlier this year dropped his bid for the party's presidential nomination, criticized the Obama policy but appeared to stop short of barring deferred action immigrants from obtaining licenses in his state.

Most states, with California and Texas the notable exceptions, deny in-state tuition rates at public universities to illegal immigrants and that won't change for those getting deferrals, unless states take action on their own.

The Pew Hispanic Center estimated as many as 1.7 million people could qualify for the federal program. In Texas, an estimated 170,000 people could benefit, according to the Migration Policy Institute, a Washington, D.C.-based think tank.

Since there are only a few who will buy one, then offers for the house could be in low price. As it is the Christmas season, people tend to be generous and inclined to agree more on a low price deal than the original value. Another best time of the year to buy a house is during the time of Lent particularly Easter Sunday. Offers tend to come by after Easter Sunday because also to the celebration that this day brings.

Though there are some people who believe that there is not really the ?best time? to buy a real estate. The best time of getting a house could be that time when you had been to different houses and you end up choosing the house that you really wanted. Another time of the year that?s best for buying a house is when there are a lot of houses being put in the market that people find it difficult to choose from, but doesn?t have the pressure to buy one right away. This gives the opportunity for those serious buyers to get the property that they want.

Getting a house or a property is really one that takes time and consideration. The right budget and the comfort of the home that you will be choosing are important when deciding to get a house. I believe that the best time to buy real estate is that time that you are ready. This is in terms of financial capabilities. Superstars and Divas visit the Mattel Children?s Hospital UCLA

LOS ANGELES ? Though they?ve gathered to do battle in the City of Angels for SummerSlam this weekend, WWE Superstars and Divas brought smiles to children?s faces at the Mattel Children?s Hospital UCLA Thursday afternoon. (WATCH | PHOTOS)

?Today we had the opportunity to go around and meet a lot of the kids here in the hospital. We got to talk with them and get to know them a little bit better,? World Heavyweight Champion Sheamus told WWE.com.

In addition to touring the state-of-the-art facility, part of the new Ronald Regan UCLA Medical Center that focuses on pediatric research, teaching and care, The Great White, Hornswoggle, Eve and Alicia Fox spent time with the young patients and their families at the hospital.

?We are visiting some of the children and just trying to distract them from their daily routine and show them some love,? Alicia Fox explained of their visit.

The World Heavyweight Champion received many smiles on Thursday as he passed out a very welcomed gift to the kids at the hospital.

?We've been handing out Mattel?s Brawlin? Buddies to them,? The Great White said. ?It's been great; I got to meet a lot of positive and brave kids. It's been an absolute honor and pleasure.?

Ecuadorians rally around decision to offer asylum for Assange (+video)

Britain's forceful demands on Ecuador over Julian Assange, the founder of WikiLeaks, has rallied Ecuadorians around their country's decision to grant him asylum.

In the letter, technically an?aide memoire in diplomatic speak,?the UK government explained that it has the right to enter Ecuador?s embassy if the Ecuadorean government were to decide to grant asylum to Mr. Assange, the founder of the antisecrecy group WikiLeaks.?

The letter was seen as a direct ?threat? to the country, said Mr. Pati?o.??We are not a British colony,? he said. ?The days of the colony are over.?

This decision rallied support among Ecuadorians towards the decision ??formally announced today ??to grant asylum to Assange. Some hardliners, supporters of President Rafael Correa, protested outside the UK embassy in Quito on Wednesday night, while others cheered when Pati?o officially announced Ecuador would grant Assange asylum in an early and longwinded press conference on Thursday.

For common people in Ecuador, it was good for their country to stand up against larger countries.

?The way the UK expressed itself was almost violent,? says Pablo Boada, a cultural consultant, reached by phone in Quito?s old town.??It awakened my sense of solidarity towards the Ecuadorean state as a whole."

As Ecuador is about to enter an election cycle, this sense of solidarity could well be harvested by President Correa, who is most likely going to run again for president in February 2013.

According to government sources who spoke to The Guardian earlier this week, the Ecuadorean government had already reached an agreement with Assange when the WikiLeaks founder decided to enter the embassy in London on June 19, officially asking for political asylum.

But despite this, authorities seemed surprised by the British reaction, and acted immediately to respond to what they saw as a ?threat.?

?Nobody is going to intimidate us!? Correa tweeted.

For many abroad, who have read about Correa?s difficult relations with media this year, it might seem ironic that he is granting asylum to Assange in the name of freedom of expression.

In April, Assange conducted an interview with Correa for his TV show on Russia Today, a Russian state-funded channel in English, and the two joked about issues such as freedom of speech.

?Cheer up! Cheer up! Welcome to the club of the persecuted!" said Correa, who believes Assange should be granted political asylum because he is being politically persecuted.?

In recent years, WikiLeaks has begun publishing huge volumes of classified US military and diplomatic documents. Sweden, meanwhile, is seeking Assange's extradition in order to question him about sex crime accusations made against him. Some of Assange's supporters fear Sweden would give Assange over to the US, however experts note it would be simpler for the Americans to just extradite Assange from the UK.

In Ecuador, some within the business community are simply worried about their livelihoods.?Some businessman saw the decision as a threat to Ecuador?s trade relations.

?My worry is that we can be seen as an unfriendly country,? says Javier Mu?oz, who runs a car import business in Quito and was reached by phone.??If Ecuador starts fighting with these countries, this could have a very negative effect for everyone."

The United States is Ecuador?s main trade partner. Long-time US trade benefits with Ecuador, under the Andean Trade Preferences Act, are up for renewal this year. Businessmen like Mr. Mu?oz are worried that the US Congress might decide not to renew the preferences following the Assange decision.

However, it is unclear whether anything ultimately comes of Ecuador's decision.?

Today the British Foreign Secretary said the UK does not recognize the principle diplomatic asylum and would not allow Assange to leave the country.

It might remain little more than a symbolic gesture for Ecuador, but a symbolic gesture that might have repercussions.

Clear links found between inflammation, bacterial communities and cancer

ScienceDaily (Aug. 16, 2012) ? What if a key factor ultimately behind a cancer was not a genetic defect but ecological?

Ecologists have long known that when some major change disturbs an environment in some way, ecosystem structure is likely to change dramatically. Further, this shift in interconnected species' diversity, abundances, and relationships can in turn have a transforming effect on health of the whole landscape -- causing a rich woodland or grassland to become permanently degraded, for example -- as the ecosystem becomes unstable and then breaks down the environment.

For this reason, it should come as no surprise that a significant disturbance in the human body can profoundly alter the makeup of otherwise stable microbial communities co-existing within it and that changes in the internal ecology known as the human microbiome can result in unexpected and drastic consequences for human health.

A report published in the August 16 online edition of the journal Science gives evidence for such a chain reaction. It has long been known that gut inflammation is a risk factor for cancer. The new study suggests that this may be in part because inflammation disturbs gut ecosystems leading to conditions that allow pathogens to invade the gut. These pathogens may damage host cells increasing the risk of the development of colorectal cancer.

The authors of the study were Janelle C. Arthur, Ernesto Perez-Chanona, Marcus M?hlbauer, Sarah Tomkovich, Joshua M. Uronis, Ting-Jia Fan, Christian Jobin, Arlin B. Rogers, Jonathan J. Hansen, and Temitope O. Keku from the University of North Carolina at Chapel Hill; Barry J. Campbell and Jonathan M. Rhodes from the University of Liverpool; Turki Abujamel and Alain Stintzi from the University of Ottawa; Belgin Dogan and Kenneth W. Simpson from Cornell University; and Anthony A. Fodor from the University of North Carolina at Charlotte.

In a series of experiments conducted with mice prone to intestinal inflammation, the researchers found that inflammation itself causes significant simplification in diverse communities of gut microbes and allows new bacterial populations to establish major footholds. Among the bacterial taxa invading the disturbed intestinal ecosystem, the research team found a greatly increased presence of E. coli and related bacteria. By putting E. coli bacteria into mice that were raised under sterile conditions, the team also found that the presence of E. coli promoted tumor formation. When regions of the E. coli genome known to be involved in DNA damage were removed, the ability of the E. coli to cause tumors was substantially decreased.

The researchers noted that the mouse results may have implications for human health as well, as they also found an E. coli variant with the suspect genes in high percentages of human patients with colorectal cancer and irritable bowel disease.

Anthony Fodor, an associate professor of bioinformatics at UNC Charlotte, a co-author on this study and a member of NIH's Human Microbiome Project consortium, has also been involved in another study that analyzed bacterial populations in relation to colorectal cancer, recently published in the journal of the International Society for Microbial Ecology (ISME, May 24). This study examined 70 human subjects and found that many taxa, including some pathogens broadly related to E. coli, were present at higher levels in biopsies from patients with colorectal adenomas, when compared to biopsies from healthy patients -- the study controls.

Though Fodor believes the finding, by showing a correlation between microbial diversity and cancer in humans, may have potential for future medical diagnoses, he cautions that the results were far too preliminary to be used to draw any solid conclusions.

"As is usual in human studies, we didn't have cause and effect" Fodor noted. "We don't know if microbes are somehow causing conditions to shift in the gut that would cause cancer or if there are conditions that are associated with cancer that would increase the openness of the gut to particular microbes."

In contrast, Fodor said the current Science study "is all about mechanism."

" Generally, to get at mechanism, you need to be able to do experiments and you can't do experiments in humans," he said. "The mouse model studies allow us to test theories of causation." Fodor remarked that the Jobin lab's mouse studies were quite elegant in narrowing in on a causal connection between microbes and colorectal cancer. "It's amazing how cleanly this came out."

The first step in the study established a clear connection between the physiological condition of intestinal inflammation and a subsequent change in microbial communities in the gut.

Key to the studies were IL10-/- mice, a mouse model that is genetically prone to gut inflammation because it is bred to lack a gene that suppresses the inflammatory response. Using a technique that allows researchers to identify bacterial varieties by examining variants in a specific gene (16S rRNA), the team compared bacterial communities in the inflamed guts of IL10-/- mice with those in healthy normal ("wild type") mice. They found that the diversity of different kinds of bacteria was significantly lower in the mice with genetically-facilitated inflammation. Among the IL10-/- mice, however, the team found little difference in microbial diversity between mice that simply had inflammation and those that also had cancer, indicating the inflammation was the critical factor affecting microbe populations.

"A shift in the microbial community is associated with inflammation," Fodor noted. "It is interesting that the microbial community is actually changing with the disease state, which indicates that it is either responding to or contributing to the disease state."

Despite the overall drop in diversity, the team found that the presence of E. coli was markedly increased (by a factor of 100) by inflammation.

The researchers were curious whether or not they could find evidence for a cause-and-effect relationship between E. coli and colorectal cancer. To probe this, the team raised sterile (bacteria-free) IL10-/- mice and then inoculated each mouse with either an E. coli variant (called NC101) or Enterococcus faecalis, another common gut bacterium. Both groups of inflammation-prone mice developed severe gut inflammation (colitis), but, significantly, 80 percent of the E. coli infected mice also developed colorectal cancer, while the Enterococcus faecalis inoculated mice remained cancer-free.

The experiment seemed to show that it was the presence of E. coli in an inflamed environment, rather than just inflammation itself, that led to cancer. "This starts to get to mechanism," Fodor noted, "because this would argue pretty strongly that there's something in the E. coli that's causing the mice to develop cancer."

From reviewing the literature on E. coli and associated bacteria, the researchers knew that some strains of E. coli contain a set of genes known as "the pks island" that have been implicated in pathways that cause DNA damage. Remarkably, the researchers found that when mice were inoculated with a modified NC101 E. coli in which the pks island had been removed, the mice still developed inflammation but had a dramatically reduced rate of tumor formation. The researchers concluded that the host-microbial interactions that allow E. coli to cause inflammation are distinct from the interactions that cause that inflammation to progress to cancer.

The team then looked to human subjects to see if there was a specific association of pks-containing bacteria with colorectal cancer. The team examined 24 healthy people, 35 with irritable bowel disease (which includes gut inflammation) and 21 with colorectal cancer.

"Remarkably, we found the bug with pks in only 5 out of 24 controls (20% in healthy people), but if you look at people with inflammatory bowel disease, the bug and pks were present in 14 out of 35 (40%,) and with people with colorectal cancer it was 15 out of 21 (66.7%)," Fodor noted.

"These are exciting results because they suggest there may be a direct link between changes in the gut microbiome and the progression from inflammation to cancer," said Fodor. "If we can understand the pathways by which pathogens damage host cells within the context of host inflammation, we may be able to formulate a personalized approach to cancer prevention in which particular pathogenic taxa or genes are targeted in vulnerable human sub-populations."

All Kitchen Recipes ? Pasta

It?s difficult to remember what we did for fast, satisfying meals before pasta became readily available. Because it keeps well and is quick to cook, cheap and tasty, pasta has become one of our most popular foods. Nutritionally speaking pasta is high in fibre and low in fat and calories ? it?s the sauce that makes pasta dishes fattening. If you?re watching your weight use low-calorie ingredients like vegetables, skimmed milk and low- or medium- fat cheese to replace full-fat equivalents, and keep the use of ingredients like olive oil, butter, olives and salami to a minimum.

Fresh and Dried Pasta?

Fresh pasta is now widely available in a good range of shapes and flavours, in supermarkets as well as delicatessens. It cooks in a matter of minutes and is considered superior to dried pasta. Of course, you can make your own at home following our recipe overleaf ? homemade pasta is incomparable. The best flour to use is a very fine-textured soft wheat flour known as ?type 00?. This yields a dough which is easier to stretch by hand. Durum or hard wheat semolina flour is only really suitable if you are using a pasta machine which flattens, rather than stretches the dough. Both types of flour are available from Italian delicatessens.

If you make pasta frequently, it is probably a good idea to invest in a pasta machine to do the rolling and cutting for you. One of these machines will take all the hard work out of rolling and get the dough really thin. It will also ensure that the dough is cut into neat, uniform shapes, so that it cooks evenly.

Dried pastas are available in a bewildering range of sizes, shapes and flavours. The best are made from 100% durum wheat (pasta di semola di grano duro); some include eggs (all?uovo).

Shapes, Sizes and Flavours

The choice of shape and size is a matter of personal taste but it?s worth bearing in mind that some varieties ? such as conchiglie (shells) ? are particularly suited to holding lots of sauce, while other chunkier shapes ? such as penne ? are good with robust vegetable-based sauces. Fine spaghetti and noodles are excellent with delicate fish sauces, while tiny ditalini are perfect for soups and young children?s meals. There are the classic recipes, such as macaroni cheese, spaghetti bolognese and spaghetti alia carbonara, but do experiment with your own combinations.

Coloured and flavoured pastas (fresh and dried) can add a new twist to a familiar meal. These are coloured with pureed vegetables; although the colours are fun the flavours are rarely pronounced. If you?re looking for extra flavour choose those flavoured with garlic and herbs. Wholemeal pasta is made with wholemeal flour and has a rather heavy chewy texture. If you?re trying to increase your intake of dietary fibre you may prefer to eat plain pasta with a high fibre vegetable-based sauce.

Quantities

It is difficult to give specific quantity guidelines for pasta since it really depends on how rich the sauce is, and even on the size and shape of the pasta ? some are easier and quicker to eat than others! Of course appetites, particularly for pasta, vary enormously, too. As a very rough guide allow about 75-125 g (3-4 oz) uncooked weight, per person.

?Cooking Pasta?

All pasta, fresh and dried, should be cooked until al dente - firm to the bite, definitely not soft, and without a hard, uncooked centre. The most important thing to remember is that pasta requires lots of fast-boiling salted water; a small pan containing insufficient water will produce unevenly cooked stodgy pasta. Some cooks add a little olive oil to the water in the belief that it will prevent sticking, but this is not necessary. Fresh pasta will cook in a few minutes, while dried pasta usually takes around 8-12 minutes. Whether you?re cooking fresh or dried pasta the time will depend on the size and shape; obviously thin shapes like capellini (angel?s hair) will cook more quickly than chunky or filled shapes. Manufacturers? recommended cooking times vary too. The only accurate way to determine when pasta is cooked is by tasting.

?Serving Suggestions?

Toss cooked pasta with the chosen sauce or butter as soon as it is cooked, or it will stick together as it cools. Always have warm plates or bowls ready as it quickly loses heat. If cooking pasta to serve cold, drain and rinse with cold water to prevent further cooking and rinse away surface starch. Toss with dressing while still slightly warm for optimum flavour. If you store the salad in the refrigerator, bring it to room temperature before serving.

Parmesan cheese is a must for serving with hot pasta ? although some seafood pasta dishes are better without it. Do buy a piece of Parmesan; the taste is far superior to the ?soapy? ready- grated alternatives sold in tubs and packets. A well wrapped piece of Parmesan will keep in the refrigerator for several weeks. Rather than grating it on the fine side of the grater, try using a cheese slice or swivel potato peeler to shave off large flakes of cheese. But, dieters be warned, just one tablespoonful (15 ml) of grated Parmesan adds an extra 70 calories!

Should you find yourself with leftovers, the only satisfactory method of reheating pasta is in the microwave. Both dressed and plain pasta can be reheated in this way without loss of texture or flavour. To reheat plain pasta, toss with a little olive oil, cover and cook on HIGH for about 2 minutes. Alternatively, toss plain leftover pasta with a well flavoured dressing and salad ingredients and serve as a salad.

Life, Art, Tea, Food and Alaska: I swear I'm not a Vegetarian...

Trust me I love me a good steak or hamburger, especially when paired with bacon or sauteed mushrooms. But vegetables and tofu have a soft spot in my heart as well. Since I've been doing this high protein/low carb diet I've been having fun trying out new ways to enjoy some of my favorite veggies (and even some of my not-so favorite ones).

Tonight's dinner is a play on Pad?Thai?in the sense that it's spicy and it has peanuts in it. I only made enough for my dinner based on what I had in the fridge.

-1 1/2 Tbls. olive oil or similar cooking oil
-Super Firm tofu (I used half of a package drained and chopped)
-5 or 6 cremini mushrooms sliced
-3 mini sweet bell peppers or 1 regular bell pepper
-1/4 cup of onion diced
-1 handful of spinach
Sauce:
-1 1/2?Tbls.?Peanut butter
-1-2 tsp.?Sriracha?sauce
-1/3 cup plain soy milk
-Salt and pepper to taste

Saute?the veggies together on medium high heat with the oil until the mushrooms start to brown and the onions start to become translucent. Add in the tofu and stir, allowing the tofu to get warm. Add in the peanut butter, sriracha sauce, and soy milk. Stir until the sauce begins to bubble and thicken and enjoy! If you want some more carbs in your diet, feel free to double the sauce ingredients and serve over rice or noodles.

Not a vegetarian/don't like tofu? Feel free to use any kind of meat substitute or pieces of sliced meat such as chicken or pork. Throw them in right as the vegetables are done cooking.

Don't like soy milk? Try it out with almond milk or coconut milk, cream cheese or sour cream. If you want to use regular cow's milk make sure it has a high fat content, otherwise it may curdle when mixed with the? Sriracha?sauce.

180-pound chimp escapes in Las Vegas ? again

A chimpanzee who rampaged through a Las Vegas neighborhood last month made a second escape from her backyard enclosure this weekend, but her caretaker thinks she had human help this time.

Timmi De Rosa says the 13-year-old chimp, CJ, didn't get loose Saturday by bending steel bars without help. She thinks someone let CJ out of her cage. De Rosa says the 180-pound animal was captured quickly and was never a threat to neighbors.

The chimp was turned over to an animal entertainer for safekeeping before going to a sanctuary in Oregon.

On July 12, CJ and her mate Buddy broke free and roamed the neighborhood, pounding on vehicles and climbing in an unoccupied car. An officer shot and killed Buddy when the animal frightened bystanders.

Buddy was the more aggressive male companion and "worked 24/7 trying to break out" of his enclosure ? he finally busted through a pair of double gates, De Rosa said.

A U.S. Department of Agriculture inspector that visited the chimps' enclosure after the first escape cited a number of "noncompliance" issues, according to a July 17 report obtained by The Associated Press.

Inspectors said the joint between a block wall and a metal gate had been damaged, and that a secondary gate around the main enclosure wasn't locked at the time of the escape.

Chimp attack victim: 'Hopefully by Christmas I could get hands'

The chimps escaped just hours before a welder was scheduled to fix gate hinges, De Rosa said.

De Rosa said CJ was never motivated to break out of the enclosure, and she doesn't think she did it without help.

However, her fianc? and the chimps' other caretaker, Lee Watkinson, said CJ was capable of bending and breaking steel bars if she wanted.

"You have no idea how strong a chimpanzee is," he said.

'A free-for-all'
The Human Society says the incident underscores Nevada's lack of rules on keeping exotic pets.

"The same chimpanzee escaping twice in less than a month underscores that large, powerful exotic animals should not be kept as pets. Nevada is one of just six states with no rules on the private ownership of dangerous wild animals, and it's a free-for-all that puts people and animals at risk," said Holly Haley, the Humane Society's Nevada state director.

De Rosa and Watkinson are not the chimps' owners. They said they were caring for the chimps at the nearby home of the owner. The chimps were housed in a yard-sized enclosure in the neighbor's backyard.

"We don't think people should own chimps. We found these chimps in a horrible condition" six years ago, De Rosa said. They built what they thought was a more secure and larger enclosure.

"We changed our lives to take care of these chimpanzees," De Rosa said. "I guess we should have had 24-hour security."

The caretakers were given a mid-August deadline to address the issues noted in the USDA inspection, which included cleaning up areas around the cage. USDA spokesman David Sacks said Friday that his agency was still deciding whether to launch an investigation. If investigators determined Animal Welfare Act rules had been broken, the owner could face fines of up to $10,000 per violation.

CJ's caretakers had been planning to take her by the end of August to Chimps Inc. of Bend, Ore., a sanctuary where she would interact with other chimps.

The day before the second escape, CJ's caretakers said she'd been enjoying the human attention and camera crew visits that came with her fame and seemed unfazed by her companion's absence. However, she was showing signs of unhappiness.

"She was like a sad dog who just sat there," De Rosa said.

Why do chimps attack?

During her escape Saturday, CJ rollicked in the neighborhood, played with garden hoses, and even appeared to enjoy her roundup. She became agitated when an animal-control officer showed up with a tranquilizer gun ? the same officer who responded to the earlier breakout.

"She screamed. I think she recognized the guy," Watkinson said.

The caretakers say they no longer have authority over CJ but are trying to expedite plans for the chimp's transfer to the sanctuary.

"Animal control did a good job," Watkinson said. "We've always said they did what they had to do."

Anyone who grew up in the South has some kind of fried chicken memory. Or maybe no particular, specific single event at all, because fried chicken is so ubiquitous. But it is one of the many food topics a true Southerner can weave a yarn around. Fried chicken a simple weekend supper, first choice for a picnic or dinner on the ground, someone?s favorite special occasion meal. Fried Chicken is served at big, noisy, sloppy family gatherings, packed into the car for road trips, served at summer camp, or for small Sunday after church lunches. That?s where I ate most of my fried chicken growing up.

Julia Child had dinner at my house when I was a kid. You may be wondering how this fits into a story about fried chicken, so here it goes. Julia and Paul Child were in Memphis raising funds for Planned Parenthood and my parents were selected to host a dinner party for the Childs and select guests (that is to say potential donors). People were scrambling for the opportunity to participate ? to wash Julia?s plate, or serve Paul a drink.

The various committee members met to discuss plans and?to decide, what exactly?does one?serve Julia Child at party? Ideas about hiring the chefs from the best restaurant in town to prepare a gourmet meal, or caterers to cook a menu made up of the fanciest ingredients available in Memphis were discussed. But my mom put out that maybe Julia gets that all the time, so why don?t we serve her something unique, that she might only be served in Memphis. So a caterer who specialized in Southern family weddings was brought in to prepare the classic Southern meal ? collards, grits, biscuits and fried chicken. All the influential muckety-mucks invited to write checks filled their plates over and over again, thrilled to be served their favorite foods rather than the precious, overblown ?gourmet? stuff they expected. Both Julia and Paul were noticed returning to the buffet for seconds. I must have been eight or nine, but I remember her, so tall and jovial. I still use the signed copy of The French Cook my mother gave me then.

Nowadays, like many things, most people have given up on frying their own chicken. There are so many places to buy it ready-fried, and some of them are not half-bad. From the Colonel to local joints, to grocery stores and even Wal-Mart, more often than not if you get fried chicken, it came from someplace else. I have it on authority that many a hostess has carefully arranged fried chicken on a nice napkin in a lovely basket then thrown the bucket in the neighbor?s garbage can. People will drive miles for a famous chicken joint, or pick it up just around the corner. The big iron skillet of chicken bubbling away in hot grease is just a memory for many people, something a grandmother or beloved housekeeper used to do. At the mention of frying chicken now, I hear people groan or sigh ? it?s so messy, frying makes the house smell, all that grease all over the range. Yes, grease splatters. Yes, the smell of that grease tends to linger, but homemade,?cooked-with-love fried chicken is such a special, special offering that everyone should have the opportunity to dig into a juicy, crispy piece at least once. It may not make you abandon the bought chicken forever, but it will create your own Fried Chicken memory.

Fried Chicken

I have watched and read and practiced and learned over the years to become a pretty good chicken fryer. I have my not so good batches every once in awhile, but that hasn?t put me off. It?s a fine meal that is always appreciated.

So here are my tips for some chicken fried love.

First, you must marinate the chicken in buttermilk so the meat is moist and tender.

Going into the doors. Holy moly I can?t believe the people.

One picture is the front of the line, one picture kinda the back, EXCEPT my camera can?t capture two and a half blocks of people.

Many are actually women (the shock).

Tim just emailed again:

I have never been to a rally, but the picture in my head did not include a line to get off the exit, a half mile walk to the line and then a multiple block line. Consider me heartened.

Update ? Overflow crowds in Mooresville, as reported by reader Hope:

My 18 year old daughter and I attempted to go to the Romney/Ryan rally this morning in Mooresville , NC. This is a video [image below] of the crowd outside around 9 a.m. The crowd behind me was as big. We did not get in as the crowd was too large. The fire marshal turned the crowds away. This was as close as we got.

We saw about 12 protestors in 3 separate groups of 4 each. They were not convincing anyone that ?Offshore Mitt? posed any threat to the country.

As one man said to me?we are the people that work for a living and the people that are protesting are the people that vote for a living. Be encouraged. There are many, many good people with us.
